No Bake Protein Cookies are making their feature on my blog for the very first time! Truth is I always wondered whether protein cookies were actually healthy. And then I made some. The very first thing I noticed was replacing flour with protein. And even though that is an obvious one… (I had my duh! moment.) it still made me go, Oh!! What I loved about this recipe is that I could really add more of whatever I wanted. Pistachios, almonds, nuts or even shredded coconut. Whatever you fancy.

You can control the carbs and sugars that go into your cookies. Just choose the ingredients wisely. Experiment if you have the time. But be prepared for some failures. If you’re short for time, try this already tried and tested recipe for protein cookies. So good.😋

No-Bake Oat Protein Cookies with GNC Whey Iso Burst

Prep time: 10 mins
Total time: 25 mins
Servings: 6-8 cookies
Calories: 110 per cookie

Ingredients:

  • 1/2 Scoop Whey Iso Burst Chocolate
  • 1 Cup Natural, Unsalted creamy Peanut Butter
  • 1/2 cup Maple Syrup
  • 1 Cup Gluten Free rolled oats
  • 3 Tablespoons Unsweetened Cocoa powder

Instructions:

  1. Line a baking sheet with parchment paper and set it aside.
  2. Add peanut butter and maple syrup in a microwave-safe bowl. Whisk together until well mixed.
  3. Heat in 20-second increments in the microwave, until the mixture begins to dry and become dough like. (4-7 rounds). Stir after each round.
  4. Add oats, cocoa powder and the protein scoop to the peanut butter mixture. Mix well until they are thoroughly combined.
  5. With a 2-tablespoon cookie scoop, scoop the cookie dough onto the baking sheet. Use a fork to flatten the cookies.
  6. Put the cookies in the freezer for 15-20 mins. The cookies will become softer when left at room temperature.
  7. Store leftovers in the fridge up to 3-5 days is recommended!

Veggie Pasta in 30 minutes with
Catelli Ancient Grains

This yummy main dish as seen on Instagram is a very easy week day recipe! It’s so easy, that you’ll read through all the steps below in less than 2 minutes. Let’s go!

Ingredients
Rosée sauce
Stringless sugar snap peas
Zucchini
Peppers
Mushrooms
Cajun seasoning
Catelli Ancient Grains Pasta
Olive oil
Sweet onion

Directions
1. Boil Catelli Ancient Grains pasta until cooked. Catelli Ancient Grains pasta is made with an all-natural, 100% whole grain blend of Canadian wheat. It also has quinoa, amaranth, teff, sorghum and millet. Each serving contains 12 g of protein, 8 g of fibre and 25% of your recommended daily iron intake. How awesome is that? 
2. Sautee mushrooms and sweet onion in olive oil with salt and pepper for 4 minutes.
3. In a separate pan sautee zucchini, pepper, snap peas with olive oil and cajun seasoning (as desired).
4. Take the hot pasta and mix in rosée sauce and all of the veggies.

It’s easy to get into a rut and struggle with being able to do anything due to the lack of motivation you’re feeling.

Whether it’s because you’re not feeling well, working hard 9-5 and have the burn out blues or just plain old lazy.

When lacking motivation I like to set up my desk area with things that will motivate me and give me that extra energy or push to get my mind back into full swing.

Smoothie for thought

Find ingredients that’ll give you a burst of energy. Here’s a recipe I came up with:

Handful of blueberries
2 ice cubes
1 teaspoon of chia seeds
1 and half mango cut into cubes
half a cup of milk

Put everything into your blender (I used my magic bullet) and blend away! Instant energy booster.

I love staying up to date with Fashion and the most current trends. I’ve subscribed to some of my favourite magazines and when I have a chance I sit down and read them all. A lot of the times some of the articles spark ideas and I go on a photo and writing frenzy.

Scents can really wake you up! Whether it’s a fragrance or a scented candle. I love Guerlain! My Insolence isn’t everyone’s cup of tea because of its unique scent, but fresh flowers is a good alternative.

Writing down your ideas and starting a brainstorming session makes a huge difference. I have a few notebooks where I keep all of my ideas. One of my favourites is a moleskin notebook. I keep one in my purse at all times. It’s great for when you come up with an idea on the go. Writing it down vs typing it in your phone feels a lot safer, private and can trigger even more ideas. I’m pen happy, so it works for me.

I have been a HUGE fan of Dad’s chocolate chip and oatmeal cookies for as long as I can remember. Recently I found them in the chewy kind and I just fell deeper in love. With a cold glass of milk, you can easily eat a half a box. Or at least I can.

Then one day my…

“I wanna bake something with chocolate from scratch”

feeling kicked in and my husband suggested I take a shot at baking these yummy creations. After two bakes, we have mastered the very best chocolate chip and oatmeal cookie recipe.

I know I’ve said this before in my previous recipes. I mind as well make a motto of it.

Taste it, tweak it & make it yours.

Everyone likes a different amount of salt or chocolate or whatever it may be in their food. So choose accordingly. Take risks, baking should be fun!

Ingredients

1 cup unsalted butter, softened
1 cup light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons of vanilla extract
1 3/4 all-purpose flour
1 tablespoon of baking soda
3 1/2 cups of quick cooking oats
1 teaspoon of salt
1 cup of semi-sweet chocolate chips OR milk chocolate chips

Directions

Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Don’t over mix. Cream for about 4-5 mins by hand. This ensures your cookies don’t fall flat. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended.

Mix in the quick oats, walnuts, and chocolate chips. Drop by heaping spoonfuls onto un-greased baking sheets.
Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

TIP: Chill the mix for 2 hours prior to baking and the cookies won’t spread.

If you haven’t noticed from my previous recipe posts, I love easy recipes. I work all day and come home and need something healthy, fast & flavorful. This recipe goes amazing with potatoes, steamed veggies or rice. The outcome of this recipe is a sweet, spicy (depending on whether you add spices), garlic glazed chicken. I recommend using aluminum foil on top of your roasting/baking pan for an easier clean up.

Ingredients

4 boneless skinless chicken breasts
4 garlic cloves, minced
4 tablespoons brown sugar
1 tablespoon olive oil
Add spices and herbs as desired. (I used a spice rub from William Sonoma and spices by Club House)

Directions

Preheat oven to 450F and line a baking/roasting pan with aluminum foil, lightly coat or brush oil on foil.

In a small sauté pan, sauté garlic with olive oil until tender. Remove from heat and stir in brown sugar. Add additional spices, salt etc as desired.

Place chicken breasts in the prepared baking/roasting pan and cover with the garlic/brown sugar mixture. Add salt and pepper on top for taste. I used sea salt and fresh ground pepper.

Bake uncovered for 15-30mins, check on the chicken.  The cooking time differs depending on the size and how thick the chicken breast is.

My obsession for chocolate chip banana bread believe it or not was purchasing a loaf from the Forest Hill Shoppers Drug Mart. It was the perfect balance of sweet, yet salty and moist. My advice for this recipe is tweak it where you need to in order to get to perfection. Your perfection could differ from mine by a 1/2 teaspoon of more salt or less. On that note, take risks and enjoy! :”)

Prep Time: 2hrs

Ingredients

1 cup of granulated sugar (or regular sugar)
8 tablespoons unsalted butter (or salted based on your preference. I used salted once.)
2 large eggs
3 ripe bananas (1 cup of mashed bananas)
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/3 cup buttermilk
1/2 cup of chopped pecans (optional)
Semi-sweet chocolate chips (as many as desired or 1/3 cup is what I put)

Directions:

Preheat oven to 325 degrees F. Spray/Butter/Oil up a 9×5 inch loaf pan with a non-stick spray coating preferably.

Mix or blend together the eggs, butter, buttermilk, mashed bananas and milk.

Sift together the sugar, flour, baking soda, baking powder, salt and cinnamon. Add this to the mixture above and stir in desired pecans and/or chocolate chips. Mix well.

Pour into prepared loaf pan and bake 1 hour and 20 minutes. However, check up on the bread after an hour and do the toothpick test. If it comes out clean, it’s ready. From my experience sometimes it’s 1 hr 14mins or 1 hr based on maybe a miss-measurement of ingredients or the oven you use.

Here’s the deal. You come home from the gym and you’re exhausted! Your body aches and you just want to drop to the floor. Don’t let the beat drop just yet and pick yourself up to try this AMAZING stuffed green pepper recipe. Quick and easy.

Prep Time: 35mins

You will need:
Whole Green Peppers ( 1 for each person)
Rice
Dice tomatoes, mushrooms, broccoli (whatever veggies you want)
Crushed cashews
Chicken breast cut into cubes
Cheese
Coriander

How to:
Put your rice in a rice cooker or Uncle Ben’s instant rice
Cut the top out of the green peppers. Clean them out. Place in oven to soften to desired texture.
In a sauce pan cook your chicken breast cubes until cooked. You can add honey, or just salt, pepper and cayenne pepper for a more spicy flavour.

Add your chopped veggies and crushed cashews. Sauté veggies with soy sauce or any other sauce you prefer. Healthier substitute would be coconut oil.

Place rice inside whole green pepper, chicken, veggies, rice again, topped with cheese and coriander. The images attached are a beef version I did.

This is the fastest Honey Lemon Chicken recipe ever!  For all of you who live busy lives and never have time to cook. You can do this!

Prep Time: 20mins

You will need:
Chicken (I used 3 chicken breasts)
Honey
Lemon
Vegetables – I used broccoli, green peppers & parsley
Cashews or Peanuts (which ever you prefer)
Salt & Pepper for taste and seasoning

How To:
Cut chicken breast into slices and start cooking on medium. Season with mixed ground pepper and a bit of salt.  Just before chicken is cooked turn temperature to high and add honey to pan (Make sure you use enough honey to cover all the chicken). Cook till the chicken is golden and then add fresh lime or lemon juice on top. Cut up your vegetables and mix in a bowl. Either you can add it into the chicken honey mix and cook to desired texture or eat it as is with dressing on the side. For the rice, I just use my rice cooker or there’s always Uncle Ben’s if you’re really in a rush.
